When stored in the right environment, olive oil can preserve its original aroma, nutritional value, and quality for up to 2 years. However, olive oil kept under unsuitable conditions will gradually oxidize, deteriorate, and develop unpleasant odors and flavors. For this reason, it is crucial to protect olive oil from light, heat, and oxygen.
Sunlight and fluorescent lighting can damage the valuable compounds in olive oil. Therefore, olive oil should be stored in a pantry, cupboard, kitchen cabinet, or any dark area with a door. Kitchen countertops, windowsills, or places exposed to light for long periods are not suitable for olive oil storage.
The chlorophyll found in olive oil makes it sensitive to light. For this reason, olive oil should be stored in stainless steel containers, tins, or dark-colored glass bottles. Olive oils purchased in clear glass bottles can be wrapped in aluminum foil to reduce light exposure. Reactive metals such as iron and copper should never be used, as they can damage the chemical structure of olive oil.
One of the biggest enemies of olive oil is oxygen. When exposed to oxygen, olive oil oxidizes over time and loses its flavor. Therefore, make sure the container is sealed with an airtight cap. Tightly closing the lid after each use will help extend the shelf life of the olive oil.
The ideal storage temperature for olive oil is between 14°C and 21°C. If you live in a region with a humid climate and temperatures of 27°C or higher, olive oil may be stored in the refrigerator. In this case, the olive oil may solidify and become cloudy. This is a completely natural process; simply allow it to return to room temperature before use.
If you purchase olive oil in large quantities, it is recommended to transfer it into smaller bottles for daily use. This method reduces the main stock’s exposure to oxygen and helps keep the olive oil fresh for a longer time. Small bottles should be tightly sealed and stored in a cool, dry, and dark place.
Buying olive oil in bulk can provide economic benefits; however, proper storage of large quantities is far more important.
Olive oil easily absorbs surrounding odors. Therefore, ensure that the storage area does not contain cleaning products, spices, or strongly scented items. Otherwise, the natural aroma of the olive oil may be compromised.
